Inspired by mom's cold last week!
Lugaw ("loo-gao-w") aka. arroz caldo is a Filipino rice porridge dish. I know there's come different versions, esp since I grew up in the US and not the Philippines, and everyone likes it their own ways, plus a rice porridge dish is really common in other Asian cuisine, but this is based off of how I used to have it when i was little living in the Bronx with my mom and grandma!
I don't really eat when i'm sick (which is how my fam knows I'm sick lol) but I always loved it when my mom or my grandma would make my fave soups like sinigang and lugaw! It's easy to whip up and really comforting with all the ginger, garlic, and soft rice aaaaa!!!! My grandma would make it with leftover chicken, shredded and cut into the soup, or lil cubes of panfried tofu (tokwa!) with some soysauce mixed with a little bit of vinegar and fried garlic on the side. It was the best making myself some while at school when I needed a pick me up as well.
